For Brazil see the dedicated Wiki page.

Ecuador and Uruguay are smaller countries with unexceptional opportunities. Ecuador is relatively undeveloped in terms of sophistication and punting action in Quito (Ecuador) is slightly surreptitious (locals will warn you about safety in different streets and areas). Uruguay can be done as an overland trip between Brazil and Buenos Aires (with a short ferry crossing) and is relatively safe. Buenos Aires (Argentina) is a sophisticated city with a wide range of options, though greatly reduced from its former glory.
